Unapologetically original, fine structured, fragrant and attractive style of Valpolicella.
Castelforte Valpolicella Ripasso is a dry and full-bodied wine, with a complex perfume of cherries, red fruits and spices. Made with 70% Corvina, 20% Rondinella and10% Corvinone. During the winter the Valpolicella wine is passed over the skins from the remaining production of the Amarone, using the traditional ?Ripasso? technique and then aged for 12 months in oak. More work in the vineyard, a little more expensive, but worth waiting for. Superb wine.

Food recommendations: Lamb shank, calf?s liver or a mushroom pasta dish. Hard mature cheeses would also suit.
